Broccoli

Broccoli is very low in saturated fat and cholesterol. It is also a good source of Protein, Vitamin E (Alpha Tocopherol), Thiamin, Riboflavin, Pantothenic Acid, Calcium, Iron, Magnesium, Phosphorus and Selenium, and a very good source of Dietary Fiber, Vitamin A, Vitamin C, Vitamin K, Vitamin B6, Folate, Potassium and Manganese. 

Bollywood celebrity enjoys all greens especially cruciferous vegetable broccoli. It completes her meal and is one of the secrets to her peaches and cream skin. 

Broccoli has earned the term Super Food because -

Broccoli in particular has been shown to contain chemicals known as glucosinolate that help to form an important compound – diindolylmethane or DIM. DIM evidently induces higher levels of reactive oxygen that can help to crush free radicals and protect the system from cell-damage and degeneration.

Sulforaphane potent derivative of broccoli can, it seems, effectively rejuvenate the immune system and reduces the impact of aging.

Research has implied that the isothiocyanates in broccoli sprouts may play a role in preventing bladder cancer.

Broccoli is also a good source of lignan, which is also derived from flaxseed, pumpkin seeds, and sesame seeds amongst others. Studies have shown that lignan may play a role in substantially reducing the risk of developing breast cancer.

Broccoli contains thioredoxin which belongs to an important family of proteins that have been shown to have properties that could preserve heart health. 

How do you eat Broccoli?

Broccoli can be added to salads. I discovered that fresh tender green broccoli is relished best when eaten steamed and drizzled with bit of olive oil and a dash of salt and pepper.

Can Brocolli be eaten cookedor should it be only eaten raw? Does it loose its nutritional value when cooked - the way we cook say cauliflower (alu-gobi)?
